{"id":2583,"date":"2015-08-27T12:36:23","date_gmt":"2015-08-27T16:36:23","guid":{"rendered":"http:\/\/ridiculousredhead.com\/?p=2583"},"modified":"2015-08-27T12:36:23","modified_gmt":"2015-08-27T16:36:23","slug":"whole-food-recipes-summer-corn-cakes-with-tomato-avocado-salsa","status":"publish","type":"post","link":"http:\/\/ridiculousredhead.com\/?p=2583","title":{"rendered":"Whole Food Recipes: Summer Corn Cakes with Tomato &#038; Avocado Salsa"},"content":{"rendered":"<p>I walked into a 7-11 the other day for coffee and realized I hadn&#8217;t been in one in years. \u00a0The funny thing is in my 20s I think I lived there. \u00a0I knew all the workers by name. \u00a0I knew the exact change on a 16 oz. coffee.<\/p>\n<p>Somewhere in the recent past I stopped eating crap. \u00a0There was no day or plan set out. \u00a0I guess it must have started when I got pregnant with Lincoln. \u00a0I started realizing that everything I ate, he ate and it really kept me on track. Mid way though I also found out I was gestational diabetic and then went on a strict diet. \u00a0There was a whole formula of this much protein to this much carbs that I had to stick to in order to keep my sugar under control and avoid the diabetes meds. \u00a0It was rough and don&#8217;t think I didn&#8217;t beg Brian to get me a donut\u00a0once in awhile. \u00a0It was a real diet boot camp with real consequences.<\/p>\n<p>After he was born, I was nursing for awhile so the good diet kept going. \u00a0After more than a year of eating better it really became habit. \u00a0And my body is so much happier. \u00a0I have had a terrible stomach my whole life (think constant nauseous with no diagnosis) and that seemed to subside while I was pregnant and continued with eating better. \u00a0And now when I say screw it and pick up some crap from 7-11 because I am starving in a pinch? \u00a0I feel like there is someone punching me in the stomach for hours after.<\/p>\n<p>The hard part about starting a new way of eating is knowing what to make and having the ingredients on hand. \u00a0Since we have been at this for awhile, we have some favorites that are delicious and always in the rotation. \u00a0I wanted to start sharing them here to give you some ideas of Reynolds tested recipes. \u00a0I have also had a bunch of people ask for these recipes after trying things I have made so I thought this would be an easy place to have everything altogether.<\/p>\n<p>First up is a recipe for <a onclick=\"javascript:pageTracker._trackPageview('\/outgoing\/www.ezrapoundcake.com\/archives\/12345');\"  href=\"http:\/\/www.ezrapoundcake.com\/archives\/12345\">Summer Corn Cakes with Tomato and Avocado Salsa.<\/a>\u00a0 I found this recipe at the <a onclick=\"javascript:pageTracker._trackPageview('\/outgoing\/www.ezrapoundcake.com\/archives\/12345');\"  href=\"http:\/\/www.ezrapoundcake.com\/archives\/12345\">Ezra Pound Cake<\/a> website and it&#8217;s a big favorite around here. \u00a0It just tastes like summer in New Jersey with the fresh corn, tomatoes and basil. \u00a0I end up using a bunch of things from the garden so it is just a fresh, clean taste.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2015\/08\/Corn-Cakes-Ridiculous-Redhead.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Corn-Cakes-Ridiculous-Redhead.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-2591\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Corn-Cakes-Ridiculous-Redhead-1024x630.jpg\" alt=\"Corn Cakes Ridiculous Redhead\" width=\"750\" height=\"461\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Corn-Cakes-Ridiculous-Redhead-1024x630.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Corn-Cakes-Ridiculous-Redhead-300x185.jpg 300w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><\/a><\/p>\n<p>The hardest part of this recipe is the chopping. \u00a0You can get it done pretty fast if you leave big chunks but I like the stuff for the salsa chopped a bit finer. \u00a0Your choice.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Tomato-Avocado-Salsa.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Tomato-Avocado-Salsa.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-2593\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Tomato-Avocado-Salsa-1024x768.jpg\" alt=\"Ridiculous Redhead Tomato Avocado Salsa\" width=\"750\" height=\"563\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Tomato-Avocado-Salsa-1024x768.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Tomato-Avocado-Salsa-300x225.jpg 300w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><\/a><\/p>\n<p>This salsa looks very avocado heavy because I only had one small tomato on hand.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Corn-Cakes.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Corn-Cakes.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-2592\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Corn-Cakes-1024x768.jpg\" alt=\"Ridiculous Redhead Corn Cakes\" width=\"750\" height=\"563\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Corn-Cakes-1024x768.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2015\/08\/Ridiculous-Redhead-Corn-Cakes-300x225.jpg 300w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><\/a><\/p>\n<p>My variations:<\/p>\n<p style=\"padding-left: 30px;\">&#8211; I rarely have red onion or green onion on hand so I usually use shallots since we grow those. \u00a0They add a nice sweetness. \u00a0Use what you have.<\/p>\n<p style=\"padding-left: 30px;\">&#8211; I have yet to have them with the jalapeno. \u00a0I am a baby when it comes to spice.<\/p>\n<p style=\"padding-left: 30px;\">&#8211; You can make your own buttermilk substitute since it expensive to buy a whole container for 2 tablespoons.
