Beets are delicious!"},"content":{"rendered":"<p>Every time I mention that I have planted beets I always get asked why. \u00a0After they call me weird, they make the face that looks like they ate a lemon and is the international sign for &#8220;Yuck!&#8221;<\/p>\n<p>This is my plea for you to at least try beets. \u00a0I am not talking about the squidgy little nuggets of grossness that are boiled beets out of a can you find on salad bars. \u00a0Seriously no one should eat those. \u00a0They have ruined the beet&#8217;s good name. \u00a0What follows here is a tutorial on how to roast beets and a way to serve them. \u00a0When roasted, the sugars in the beet caramelize and they get sweet and delicious.<\/p>\n<p>Here is my beet harvest. \u00a0It&#8217;s really the first beet harvest I could eat. \u00a0I tried to grow them last year but I planted them too late or something and I got a lot of greens but no beet roots. \u00a0This year I pulled them up and was all excited and jumping around like a 5 year old. \u00a0I came running into the house with this big basket to show TB.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2012\/07\/b-basket.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/b-basket.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-869\" title=\"b basket\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/b-basket-1024x764.jpg\" alt=\"\" width=\"670\" height=\"499\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/b-basket-1024x764.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/b-basket-300x224.jpg 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/a><\/p>\n<p>Aren&#8217;t they beautiful? \u00a0I left the dirt on them for this picture so you knew I wasn&#8217;t lying that I grew them.<\/p>\n<p>1. Next we trim. \u00a0Cut the greens off about an inch or so above the beet root. \u00a0You can also trim the long dangley root part a bit.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2012\/07\/2-cut-apart.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/2-cut-apart.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-871\" title=\"2 cut apart\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/2-cut-apart-1024x687.jpg\" alt=\"\" width=\"670\" height=\"449\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/2-cut-apart-1024x687.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/2-cut-apart-300x201.jpg 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/a><\/p>\n<p>3. One you have trimmed all your beets, wash them thoroughly. \u00a0They may not look that dirty but they have been in the ground for 2 months and grit tastes bad. \u00a0(These are about to get washed.) Since I didn&#8217;t have much confidence in my beet growing abilities, I grabbed a bunch from the store to make sure there were enough. \u00a0The nice veggie man got all excited when I asked about the beet variety I hadn&#8217;t seen before. \u00a0He said they were his favorite. \u00a0I noticed they were a lighter pink on the outside but didn&#8217;t realize until I cut into them that they were striped inside.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2012\/07\/4-extra-beets.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/4-extra-beets.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-873\" title=\"4 extra beets\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/4-extra-beets-1024x764.jpg\" alt=\"\" width=\"670\" height=\"499\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/4-extra-beets-1024x764.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/4-extra-beets-300x224.jpg 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/a><\/p>\n<p>5. After washing, put the beets into a baking dish big enough that everyone has a little elbow room. \u00a0Since the striped beets were \u00a0a lot bigger than my beets I cut them into quarters so they would cook in about the same time. \u00a0Otherwise I usually leave them all whole. \u00a0 Drizzle some olive oil over them and a pinch of salt. \u00a0I like to toss them a bit so they are nice and coated. \u00a0If you are going to put these in a salad (which we are) then you can put a little extra oil and use it later as beet infused dressing.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2012\/07\/5-oil-pan.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/5-oil-pan.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-874\" title=\"5 oil pan\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/5-oil-pan-1024x641.jpg\" alt=\"\" width=\"670\" height=\"419\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/5-oil-pan-1024x641.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/5-oil-pan-300x187.jpg 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/a><\/p>\n<p>6. Cook these in a 375 degree oven. \u00a0The length of time with depend on how big your beets are. \u00a0Small ones could be done in 20 minutes while bigger ones may need 45 minutes. You will know they are done when you can pierce it with a knife and it slides right in. \u00a0Set aside and let cool enough for you to handle them.<\/p>\n<p>7. Now we peel. \u00a0If you try to do this when they are raw it&#8217;s like trying to peel a rock. \u00a0Now the skin will literally fall off. \u00a0My very professional technique involves stabbing the beet with a fork to keep it steady (they can be slippery) and rubbing the skin off with a paper towel. \u00a0Yes, I said a paper towel. \u00a0I keep one roll for messy emergencies and this counts.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2012\/07\/7-rub-skin-off.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/7-rub-skin-off.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-876\" title=\"7 rub skin off\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/7-rub-skin-off-1024x801.jpg\" alt=\"\" width=\"670\" height=\"524\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/7-rub-skin-off-1024x801.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/7-rub-skin-off-300x234.jpg 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/a><\/p>\n<p>9. \u00a0Here are all the beets with their skins off. \u00a0They look like little jewels. \u00a0And you can really tell the difference between the purple and the striped ones.<\/p>\n<p><a onclick=\"javascript:pageTracker._trackPageview('\/downloads\/wp-content\/uploads\/2012\/07\/8-all-skin-gone.jpg');\"  href=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/8-all-skin-gone.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-877\" title=\"8 all skin gone\" src=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/8-all-skin-gone-1024x667.jpg\" alt=\"\" width=\"670\" height=\"436\" srcset=\"http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/8-all-skin-gone-1024x667.jpg 1024w, http:\/\/ridiculousredhead.com\/wp-content\/uploads\/2012\/07\/8-all-skin-gone-300x195.jpg 300w\" sizes=\"(max-width: 670px) 100vw, 670px\" \/><\/a><\/p>\n<p>10. (They are also good for your liver which is a plus for us celebrators.)
